Theexperiment was set with central composite design (CCD) with 23+star forinvestigating the effects of pasteurization temperature (70 ÷ 90 oC) and time (15÷ 35 minutes) on the selected parameters. The results showed that the optimalpasteurization process was obtained at 83 oC for 31 minutes. Consequently,vitamin C, anthocyanin, flavonoid, polyphenol and tannin contents of theproduct were 60,26 mg/L; 6,18 mg/L; 147,55 mg/L; 312,01 mg/L and 422,95mg/L, respectively.TÓM TẮTPhương pháp bề mặt đáp ứng (RSM) được sử dụng để tối ưu hóa nhiệt độ vàthời m.noci 88 gian thanh trùng sản phẩm nước giải khát thuốc dòi dựa vào các chỉ tiêunhư hàm lượng vitamin C, anthocyanin, flavonoid, polyphenol và tannin. Thínghiệm được thiết kế theo kiểu phức hợp điểm tâm (CCD) với mô hình 23+starđể khảo sát ảnh hưởng của nhiệt độ (70÷90oC) và thời gian thanh trùng (15÷35phút) đến các chỉ tiêu được chọn. Kết quả nghiên cứu cho thấy quá trình thanhtrùng tối ưu đạt được ở 83oC trong 31 phút. Hàm lượng vitamin C,anthocyanin, flavonoid, polyphenol và tannin trong sản phẩm lần lượt là 60,26mg/L; 6,18 mg/L; 147,55 mg/L; 312,01 mg/L và 422,95 mg/L.1.
